Please explain what exactly a rainbow spike is...
From what I read on the internet its a group of people spiking with a bunch of various skills at once.
What sort of skills?
Examples?
Other info I need?

Skills such as rangers with punishing shot / savage shot, mesmer with phantom pain/shatter illusions, necros with vamp gaze, eles with lightning orb / strike.

Rainbow is harder to protect against, but takes a great deal of teamwork to make sure all the differently timed attacks hit at the same time.

It is also called mixed spike which consists of 2 or 3 mix spikes.

Example:
Ranger Spiker
Ranger Spiker
Ranger Spiker
Blood Spiker Necromancer
Orders Necromancer
Insert monks and flag runner here

This is a Standard Ranger Spike

a Mix Spike is
Air Ele
Earth Ele
Ranger Spiker
Mesmer [ Phantom Pain/Shatter Delusions ]
Necro Blood Spiker
3 Monks
thats tombs Wise

For GvG

Warrior
Ranger Spiker
Mesmer
2 Monks

OK good to hear. Thats basically what I thought but I wasn't really sure.

Vent only helps so much, there's still game lag to take into account which is magnified as a problem when you've got 4 different attacks that have different timing that need to hit at the same time in order to have their highest chance of successfully killing the target before a monk can heal it.

most rainbow spike teams have 2 sec skills

E.G

Lightning Orb
Obsidian Flame
Shadow Strike
Phantom Pain + Shatter (Just over 2 secs)

Then you have the 1 second skills

Vamp Gaze
Dual Shot
Lightning Strike

On a rainbow Spike team the caller would call a target, countdown 321 spike, people with 2 second skills cast on 1 and every1 else cast on spike. Then you follow up with whatever else you have to make sure the character dies e.g Shater Enchant, lightning strike, vamp gaze
